MINI VOL-AU-VENTS (3 TYPES)
Mini round, square and fish vol-au-vents
Ingredients and preparation for round vol-au-vent
• Cubes of ham
• Cubes of cheese
• Single cream
• 1 egg
• Fresh chives
Preheat the oven to 200 °C. Slice the ham and cheese into small pieces. Mix the pieces with the egg and a dash of single cream in a bowl. Fill the vol-au-vents with the mixture and place the vol-au-vents in the oven for around 10 minutes. Serve the vol-au-vents warm with fresh chives.
Ingredients and preparation for square vol-au-vent
• Spreadable goat's cheese
• Walnuts (shelled)
Preheat the oven to 180 °C and as soon as it is hot enough, put the vol-au-vents in to warm up for about 5 minutes. Cut the bacon into small squares so that these can be used as lids. Fill the vol-au-vents with goat's cheese. Add a drop of honey and cover with a piece of bacon. Garnish with a walnut.
Ingredients and preparation for fish vol-au-vent
• 2 tbsp olive oil
• 1 pepper
• 1 red onion
• 2 cloves garlic
• Small prawns
• Fresh lemongrass
Preheat the oven to 180 °C. As soon as the oven is hot enough, put the vol-au-vents in to warm up for about 5 minutes. Heat the olive oil in a frying pan. Crush two cloves of garlic into this. Peel and chop the onion. Cut the pepper into small pieces. Add the pepper and red onion to the garlic in the frying pan. Finally, fry the prawns. Remove the vol-au-vents from the oven and fill them with the prawn and vegetable mixture. Garnish with fresh lemon grass.
