• 1 orange

• 250 ml whipping cream

• 6 figs

• 300 g vanilla quark

• 25 g butter (unsalted)

• 35 g sugar

• 4 vol-au-vents

Scrub the orange clean and juice it. Keep the peel in order to zest it. 

Pour the whipping cream into a saucepan and add the orange zest. Heat this to boiling point but do not allow it to boil. In the meantime, slice the fig. Allow the whipping cream to cool slightly and mix in the quark. 

Melt the butter in a frying pan, add the sugar, 2 tablespoons of orange juice and 1 tablespoon of water. Allow everything to boil down to a syrup. Add the slices of fig and cook for a further 2 minutes. Remove the lids of the vol-au-vents and add the quark. Place the warm figs on top of the quark and garnish with the syrup.
